all natural short rib in a brown sugar stout braise, chive & mascarpone mashed potatoes & seasonal roasted roots, shaved fennel and green onion salad, & chile oil

WILD ALASKAN HALIBUT
sumac spiced halibut, braised ancient grains & seasonal roasted roots, in an arugula & parsley vichyssoise, topped with marcona almond gremolata

SWISS CHARD & GOAT CHEESE RAVIOLI
with wild mushroom ragu, garlic confit, arugula, grated pecorino and beurre noisette
